3.5ha domaine which since its first vintage in 2013 has faced challenges and triumphs, in the continuing journey of producing its selection of premium organic white wines

Producer Climate/Soil Continental climate

Clayey limestone soils, on one part and rich alluvial on the other. Viticulture: Grapes are planted on a double guyot system, the varieties being Muscadelle, Sauvignon Blanc, Sémillon, & Chardonnay. A cover-crop is planted in the centre of the vine rows as a biological pesticide, attracting the predators who in turn eat the pests on the vines. Hand tended and hand harvested, fastidious grape selection at triage before being gently pressed to 0.6 bar pressure, (this is extremely light compared to the normal 2 bar pressure on a standard vineyard).

Vinification

Slow ferments with strict temperature control, ensures that the wines ferment slowly and hold the fruit esters. Combination of stone, and stainless steel vats. The smooth roundness comes from gentle lees stirring, over the period of 6 months as the wines age, this also adds complexity of flavours.
