Gandolini aims at producing great Cabernet Sauvignon with the expression, warmth and concentration of the New World plus the harmony, vivacity and complexity of the Old World. His 2012 Las 3 Marias Vineyards, from a very low-yielding vineyard (one kilo per plant), aged for 21 months in new oak French barrels and is a pure Cabernet Sauvignon from the higher altitude Maipo Andes zone. 2012 was a ripe, warm vintage where only the greater terroirs managed to overcome the conditions of the growing season. These vines were planted in 2001 at 7,000 plants per hectare, so quite high density, in the terraces number three and four from the Maipo River; this is one of the best terroir for Cabernet Sauvignon in Chile. The wine also contains 15% grapes from a vineyard planted in 1978. The grapes underwent a very long cold maceration (ONE MONTH!!) and fermented with native yeasts with a total maceration time of two months! The wine was matured in new French oak barrels for 20 months. This is classical Maipo Cabernet, with very subtle minty and peppery aromas, with the textbook notes of blackberries, cigar box, graphite and incipient complexity. The palate is surprisingly fresh and vibrant; you can feel like a great terroir keeps the poise in warm and dry vintages.
