The 2015 Chablis 1Er Cru Vaillons is more tightly wound on the nose compared to the Séchet, but it eventually reveals scents of lemon curd, white flowers and flint scents. The palate is very well balanced, caressing in the mouth, again quite spicy with stem ginger and white pepper generously lavished on the tensile finish, with dried honey smeared over the aftertaste. This is doubtlessly a classy Vaillon, although here I found it eclipsed by the Séchet.
